Lemon Myrtle Coconut Chilli Prawn and Vegetable Rice Paper Rolls

Serves: Makes 12 rice paper rolls

Ingredients:

» 1 pack rice paper rolls
» 12  cleaned prawns with head and tail ends removed
» ½ seedless cucumber cut into fine julienne strips
» 3 spring onions sliced into fine julienne strips
» 1 re capsicum sliced into fine julienne strips
» Coriander to taste – chopped finely
» Outback Spirit Lemon Myrtle Coconut Chilli Sauce
» Outback Spirit Lemon Myrtle Coconut Chilli Sprinkles to garnish


Preparation:

1. Prepare the rice paper rolls in cold water according to pack directions.

2. Place the prawns and prepared vegetables and herbs into a bowl. Pour sufficient Outback Spirit Lemon Myrtle Coconut Chilli Sauce to coat. Sprinkle generously with Outback Spirit Lemon Myrtle Coconut Chilli Sprinkles for added flavour and crunch. Toss together.

3. On a prepared rice paper sheet place a small mound of the mix, ensuring that each serve has one prawn. Ensure that the prawn is laid flat.

4. Fold the rice paper, frond one side, over the filling and tucking in the ends, roll the rice paper to form a neat filled roll. Moisten the top of each roll and sprinkle with Lemon Myrtle Coconut Chili Sprinkles.

5. Serve with a dipping bowl of Lemon Myrtle Coconut Chilli Sauce
