Geraldton Wax Flower Superfruit Powder
Provenance: Geraldton Wax Flower is endemic to Western Australia and is thought to only occur naturally on the coastal Quindalup dunes. It is grown commercially as a cut flower and is exported around the world.
Culinary Use: This lovely powder has a delicate, zesty citrus tang. A flavour similar to a more gentle lemongrass or kaffir lime.
It is perfect in desserts as a flavoursome garnish over a lemon curd tart or to add sparkle to a simple berry or fresh fruit salad. We love it in a simple panna cotta where the flavour shines through.
You can employ it in baking to - make some Wax Flower shortbrads or sugar biscuits or add to a delicate pastry.
Soring Wax Flower: Keep airtight in a sealed plastic or glass container after opening, to ensure no moisture enters. Best kept 9n a cupboard away from light to avoid oxidisation.
