    Anisata

    Provenance  Anise Myrtle (also known as Anisata)  is a coastal rainforest tree of subtropical eastern Australia. These days it's rare to find it in the wild, and the ones left in their natural environment must not be foraged. Fortunately for those of us who love to cook with this aromatic herb, there are significant plantations of Anise Myrtle in this region, particularly in the area around Lismore.
    Brush past an Anise Myrtle tree and an intriguing aniseed aroma will envelop you. The leaves are rich in the essential oils anethole and citral: anethole is an aromatic compound that gives the leaves their aniseed flavour, and the citral provides a slight lemon and eucalypt finish. Suitable for both savoury and sweet applications! For example dust whitebait in Anise Myrtle before flash frying or add to strained ricotta to make a unique chilled pudding!

    Description
    While the slightly curly leaves of this beautiful rainforest tree can be used fresh, they are usually dried and ground to produce a distinctive aniseed herb with a delightful aromatic finish. The flavour is similar to that found in star anise and fennel but other compounds found in its leaves add a sweetness, making it suitable for both savoury and sweet dishes. Anise Myrtle is intensely flavoured and small amounts deliver a big flavour hit so be judicious when using it. Where possible, it’s a good idea to add it towards the end of cooking to avoid dissipation of the important essential oils. It is lovely sprinkled on cooked vegetables and makes a great rub for all meats and seafood, before grilling or roasting. Add to yoghurt or crème fraiche for an interesting flavour. Add to pasta sauce or to a batter for fish.

    Storing Anise Myrtle

    This dried ingredient must be kept airtight so as to not absorb moisture from the air.

    It is best kept in a dark place, such as inside a cupboard to mitigate the effects of oxidisation from light. This is not harmful but will cause the ingredient to discolour and lose some of their  phyto-chemical activity.
