Provenance: Lemon Aspen is a tropical native fruit from the sub-tropical and tropical rainforest regions of northern NSW and Qld. Lemon Aspen is gorgeously sharp, tart and juicy and as we puree the whole rainforest fruit, this relish certainly can give you tropical vibes! Local Rhubarb is added for a particularly delightful sweeter flavour. The resulting Relish is beautifully pale pastel pink and so delicious with a chicken sandwich or a salmon bagel. This Relish Is just what you need nestled next to a leg of duck confit or even with a good pork sausage - the tartness of the relish softening the richness of these meats. Make a retro Prawn cocktail and enliven the mayo with some Rhubarb and Lemon Aspen relish. It will benefit any seafood dish. We love it as an accompaniment to roast pork and lamb too.
