Wild Rosella is a visually stunning fruit that has a tart raspberry-rhubarb flavour that is absolutely delicious. The Wild Rosella flower is the calyx of a wild hibiscus found growing throughout the tropical top end and throughout Queensland, where it is highly prized and Wild Rosella Jam is a classic!
We have dried the Wild Rosella and milled it to a lovely fine powder that has a magnificent magenta colour and intense flavour.
It makes a great addition to sauces served with red and white meats, poultry and seafood. It is perfect for desserts – try adding to mousse or ice-cream, stirring it through yoghurt or make a wild rosella syrup to pour over cakes or deserts such as crepes.
Our Wild Rosella herb powder will retain its strong colour during cooking and as a result sauces and syrups or added to ice-cream, cream etc will have a magnificent colour.
Wild Rosella is favourably accented by ginger, chilli and sugar. Its tartness is a good contrast for fruits such as peaches, pears, nectarines and berries. Apple too, is a good foil and coconut, banana and mango are lovely partners to Wild Rosella. Great in cream-based desserts and try adding to crème fraiche or cream or yoghurt for desserts. Do try it in baking too - try a Wild Rosella and Coconut Cheesecake. As mentioned Wild Rosella goes so well with so many fruits and it may be sprinkled over mango, berries, banana and so many more. Add it to a fruit smoothie for extra zing or make a Mango, Pink Grapefruit and Wild Rosella Salsa to add to tacos, dollop on freshly grilled fish or anything at all!
If you are using Wild Rosella in a cream-based dessert or cake (dairy or otherwise) that requires gelatine, a good idea is to add the Wild Rosella to the hot water and gelatine mix. The mild heat from the water will allow the essential oils to infuse and add this to the panna cotta, mousse, bavarois, cheesecake or a simple flavoured cream for a cake filling or topping. Storing Wild Rosella
These dried ingredients must be kept airtight so as to not absorb moisture from the air. It is best kept in a dark place, such as inside a cupboard to mitigate the effects of oxidisation from light. This is not harmful but will cause the ingredient to discolour and lose some of their Phyto-chemical activity.
