Pepperberry

Provenance : Pepperberry is indigenous to the gullies and woodlands of Victorian and Tasmanian highland and alpine regions. 

Pepperberry are the berries from the Tasmannia lanceolata tree that also provides the peppery  Mountain pepper herb leaves.  Pepperberries are the gorgeous black little berries that have brilliant red flesh. Our Pepperberry  is the ground, dried berries and the flavour is pungent , aromatic and very spicy with strong heat following.

The Pepperberry, once added, will add a deep magenta colour ! And remember this is an intensely flavoured spice and use sparingly and it's best to add at the end of cooking to maintain maximum flavour.

Try Pepperberry to

• spice up aoili, mayonaaise or tapenade
• Add to teasoon when you make a cup of dressings
• add a little to baked potato flesh or ricotta when making gnocchi 
• make a great pepper sauce. to accompany beef 
• add to allsorts of doughs - sourdough right through to making lavoche

Storing Pepperberry

Thee dried ingredient must be kept airtight so as to not absorb moisture from the air.

It is best kept in a dark place, such as inside a cupboard to mitigate the effects of oxidisation from light. This is not harmful but will cause the ingredient to discolour and lose some of their  phyto-chemical activity.
