Provenance Pepperleaf is the leaf from the Mountain Pepper tree that grows in the South East of Victoria's alpine and sub-Alpine regions and in the Alpine and Sub-Alpine regions of Tasmania. Our Pepperleaf is sustainably grown in bio-diverse plantations Rivermint is grown exclusively by two Indigenous Australian growers in SA and Lemon Myrtle and Anisata are from the mighty rainforest trees in northern NSW and southern Queensland.
This great Wickedly Wild Pepper Rub, spiced with Mountain Pepper and Pepperberries and redolent of River Mint, Lemon Myrtle and Anisata is perfect for rubbing on all meats, sprinkling over roast vegetables – or anywhere you want a spicy yet aromatic, flavoursome result Perfect for ribs, brisket, steaks - and that's just to start!.
- This Rub is ideal for all meats and vegetables
- Perfect with red meats such as beef, lamb and kangaroo
- Rub well into the meat and let rest ideally for at least one hour and up to 24 hours before grilling, roasting or pan frying
- Add to compound butters such as Wasabi and Wild Pepper Butter (see Recipes)
- Add a big flavour hit to slow roasted lamb shanks or beef bourguignon
- Rub gently into field mushrooms before grilling with butter and garlic and lemon
- Mix a little into Mayo for a flavour hit!

Storing Wickedly Wild Pepper Spiced Rub
The dried Spiced Rub must be kept airtight so as to not absorb moisture from the air. If it is left open, the rub will become hard and caked. If this does happen just massage the pack with your finger on the outside the break up the product. We do not add an anti-caking agent. It is best kept in a dark place, such as inside a cupboard to mitigate the effects of oxidisation from light. This is not harmful but will cause the Spiced Rub to discolour and lose some of their phyto-chemical activity.
