Davidson's Plum, Prawn, Mango and Tequila Ceviche

A tequila kissed ceviche, perfect for a light starter . This is a cheat's version of a ceviche using cooked prawns - a quick and easy recipe. If you prefer to souse green prawns until they turn pink and 'cook' in the marinade, mix all ingredients except the mango and coriander, and refrigerate for at least 4 hours. The green uncooked prawns will pickle in the tequila and Davison's plum mix and turn pink.
