Barbecued Baby Octopus in Lemon Aspen and Garlic Marinade

Bring on the hot weather as this is a fabulous recipe for your next BBQ! The high acid in the lemon Aspen tenderises the octopus while adding a great tangy flavour - you know that flavour when you cook fish at the beach? Well it's that sort of happy, lazy in the sun and surf flavour. It's really important to use macadamia oil in the marinade to get the best result.

This is such an easy dish to make - no wonder we love our barbies. We just love our old style charcoal weber BBQ. If you have a charcoal grill BBQ , please use this for the BEST flavour.

Serves 6

24 baby octopus, cleaned (they will usually come cleaned unless you are lucky enough to buy direct from the boat)

Marinade  (makes 4 cups – 1 litre)

1 1/2 to 2 tablespoons (12g) lemon aspen superfruit powder  (equals 100g fresh or frozen fruit)

31/4 cups(900ml) macadamia oil

2 teaspoons (4g) ground mountain pepper leaves

Additional cracked black pepper to taste

4 cloves garlic , crushed

 

Whisk together the Lemon Aspen Superfruit Powder with all the other ingredients.

Marinate the baby octopus in this marinade for 4 hours. reserve some marinade for serving.

Heat the BBQ grill plate to very hot. Grill the octopus for about 11/2 -2 minutes on each side, turning as necessary.

When cooked, drizzle over a little Lemon Aspen Marinade, and generously season with Wild herb Salt , or Saltbush and a good sprinkle of mountain pepper to taste.

 If serving on a platter, they look great on a bed of pre-cooked roasted or BBQ grilled red peppers.
