Our Davidson's Plum Poached Plums are a perfect, easily prepared dessert or breakfast accompaniment. And this recipe is suitable for any other fruit too - so you can try peaches or nectarines next time and figs poached this way are just divine!
These poached plums are best served at room temperature or chilled. Simply top ice-cream or pure cream with these poached fruits for dessert or serve them with yoghurt for breakfast.
serves 4
12 medium sized plums (or chosen fruit)- make sure the plums are just ripe
1 cup castor sugar
1 tablespoon balsamic vinegar
1 tablespoon Davidson's Plum Superfruit Powder
1 teaspoon Pepperberry , ground or whole
2 cinnamon sticks (optional)
2 strips orange peel
Wash the plums and cut hem into halves, removing the stone.
Combine all ingredients, except the Davidson's Plum powder, in a medium sized saucepan, on a medium heat. Slowly bring to the boil, stirring occasionally, until the sugar is fully dissolved.
Once the pot has reached the boil, lower the heat to a simmer. Add the Davidson's Plum Superfruit Powder and stir through to combine.
Cover the saucepan and cook at a simmer for a further 15 minutes.
When cooked, and the fruit is completely tender and soft, remove from the heat. Remove the cinnamon sticks and orange peel if using. Transfer the plums and syrup to a clean bowl and chill until ready to serve. Remove from the refrigerator before serving to allow to come to room temperature if desired
