Who doesn't love the sweet flavour of roasted pumpkin! And how much more delicious is it when it's rubbed with our Aromatic Anisata Cajun Spiced Rub - well heaps more to be honest! And this is so simple to do too. The pumpkin can be oven roasted or roasted in an air-fryer. You can also grill this on the BBQ too! Perfect for lunch or as a side or serve for dinner with a moghrabieh (giant pearl couscous) Lebanese style salad served warm or cold. Drizzle with our Peri Peri Wild Lime Sauce for a chilli hit:)
2 large and thick wedges of pumpkin, peeled or unpeeled as you prefer, per person, seeds removed
1 heaped teaspoons Anisata Cajun BBQ Rub per wedge (one pack should be sufficient for at least 12 wedges)
a little olive oil. if desired
Wild Herb Salt
Rub each side of the pumpkin wedges with the Anisata Cajun Rub and let rest for at least 30 minutes and up to 4 hours. You do not need to apply any olive oil at this stage.
Preheat oven to 170C
Place flat side down on baking paper on a tray and barely drizzle very lightly with a good olive oil. Oven-roast for 15 minutes, before turning and roasting a further 15 minutes or until the pumpkin is completely tender and begins to caramalise.
The rub ingredients will caramalise also during cooking adding colour and a slightly sticky glaze.
If you are cooking smaller pieces in an air-fryer we'd recommend a cook time of approx 20 minutes, depending on the capacity of the fryer.
When cooked, use an egg slider to carefully lift the wedges and place on the salad or plate. Sprinkle with Wild Herb Salt (that has Anisata as one of the wild herbs).
